Week 6 I am adding 5 healthy breakfasts to the agenda! I mainly want to have eggs 3 days a week and smoothies 2 times and let the boys have cereal or bagels on the other 2 days. We don’t eat a lot of junk for breakfast anyway, but I want them to have something more substantial and some protein.

I show off my new binder with all of my new recipes and also tattle on my hubby for yet again foiling my healthy plans by buying saltines as a snack of all things! geesh! He does clean the kitchen with the boys most nights, so I’ll let him off the hook.

Box to Basket week #5 10 new recipes

Week #5 I was going to add 5 healthy breakfasts, but felt too overwhelmed to take that on…so I decided to get a grip on my current challenge and just find a few new recipes to prepare me for the weeks ahead.

I love this week’s entry the most because I had so many mishaps and I share them in this video. If you think I’m all together and that you can’t do this challenge because you’re not as awesome as me…well this is proof that I’m not awesome at all and any person can do this!

Box to Basket week #4 5 healthy lunches

Week #4 I add 5 healthy lunches to my list of things to do! We were always just eating sandwiches with chips and something had to change. I am trying to at least find healthy breads and spreads for the occasional sandwich but also adding wraps, leftovers and lunchy type recipes. No chips for sides anymore! We have veggies or fruit or maybe some pita type baked chips with some fresh salsa or hummus.

Box to Basket week #3 healthy snacks

Week #3 I decide to think through feeding my kids snacks that actually have nutrition at least 5 days a week. I don’t really have junk in the house, but we were having some chips, crackers and all stuff from bags or boxes. I wanted to add in fruits, veggies and nuts. I think that my kids will be sustained for longer this way as well.

I also decided to give myself a break so that I could still get used to making those 5 meals!

Box to Basket Week #2 5 fresh meals

Week #2 I decided to commit to cooking 5 fresh meals. For me this was a big step because I needed to make the list, find these different ingredients and make time to actually prepare the meal. I don’t know about you, but I get busy and suddenly it’s dinner time and I haven’t even thought about what I need for that night.

Box to Basket Kick Off

I challenge myself to transition from feeding my family boxed & preserved foods to fresh healthy meals and snacks! I gave myself 8 weeks and set a goal for each one. I hope you will be inspired and follow along as I share my struggles and victories each week and set the goal for the next 7 days.
